While we’re on the subject of Cosmo’s Vegan Shoppe I wanted to take a moment to talk a little bit about them. Cosmo’s was started back in 2005 by husband and wife team Leigh & Ken Saluzzi. Initially started as an online store they moved into a traditional storefront in Atlanta in 2007. As their business expanded they moved a little outside of Atlanta into a space 3 times the size of their old one to expand the products they carry. While they no longer operate as a traditional storefront they do have limited hours where you can stop by and shop their showroom. When asked about this Leigh commented “We love when customers come in and get excited about everything being vegan!”
Cosmo’s is the only 100% vegan store in the Southeast. If you live in the Atlanta area or are passing through please stop by their showroom and tell them we said hi!

“un-tuna melts” tofu frozen then cooked with celery vegan-aise and pepper tomato and tease cheese on a piece of bread/pita delicious (for an extra treat add a slice of avocado)
Grilled Teese sandwiches are my favorite!
I would make french bread pizza with Teese mozzarella, portobella mushrooms, and baby spinach. Or veggie chili nachos. Great, now I’m hungry! XD
Teese melted in some grits with some facon bits and pineapple pieces! It’s like I’m a Southerner with a tropical flair

I love using mozzarella Teese on sandwiches – specifically, melted over a Sunshine burger on Ezekiel bread!
I’ve used Teese for grilled cheese sandwiches, mac and cheese, nacho dip, pizza and a caprese-style relish. What I’ve not tried is anything using my grill. I’ve got this idea of a hazelnut crusted eggplant with melted Teese on crusty bread and a touch of pesto, maybe a slice of tomato but that may be too much. Not sure yet. Anyway, I don’t grill a lot but it seems to me that Teese on a hot grill should work beautifully.
Also thinking of adding Teese to my mexican bean collard rollups. Should work really well.
So far my favorite Teese is the Mozzarella but I haven’t tried ALL the others yet.
top off some vegan mexican food. fresh salsa. avocado. vegan sour cream. and melted teese. melt some teese on some refried black beans too.
Pizza!!
Grilled Teese on sourdough with homemade pickled peppers, um yum. On top of enchiladas. I put it in some homemade roasted eggplant ravioli, tasty. On top of stuffed eggplant. Nachos… the possibilities are endless.
