I just came across your cheese this past week at the Naperville Whole Foods and OMG sooooo good. I used the mozz in a tomato, mozz, onion salad. But I have to say that my hands down fave is the cheese sauce that I used for mac n cheese. I melted it and whisked in a cup of soy milk, then added some diced poblano pepper- it is AWESOME! My husband (non vegan) loved it and even his friend ate it and called it “fancy” mac n cheese & didn’t know it was vegan until I told him.
Thanks for making a cheese substitute that doesn’t suck and is actually delish!! Can’t wait to try it in a quesadilla!
